Serves: 4
Prep Time: 10 minutes
Cook Time: 5 minutes
Ingredients:
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
3 tablespoons honey
4 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon fresh lemon juice
1 teaspoon sesame oil (optional)
Chopped green onions, for garnish
Sesame seeds, for garnish (optional)
Steamed rice or veggies, for serving
Directions:
Whisk the sauce:
In a small bowl, mix together the honey, garlic, soy sauce, lemon juice, and sesame oil (if using). This sauce will be the magic that coats the shrimp in flavor.
Cook the shrimp:
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp in a single layer (you may need to cook in batches) and cook for about 1-2 minutes per side until they’re pink and cooked through. Remove them from the pan and set aside.
Make the sauce:
In the same pan, add another tablespoon of olive oil, then pour in the honey garlic sauce. Let it simmer for a minute or two, stirring often, until it starts to thicken just a bit.
Toss the shrimp:
Add the shrimp back into the pan, making sure they’re fully coated in that delicious sauce. Let them cook for another minute so they soak up all the flavor.
Serve:
Remove from heat, sprinkle with chopped green onions and sesame seeds if you like, and serve over rice or alongside some steamed veggies for a complete, tasty meal.
Pro Tips:
If your shrimp are frozen, thaw them first under cold running water for a few minutes.
Want a little heat? Toss in some red pepper flakes when you add the sauce.
You can thicken the sauce by mixing a teaspoon of cornstarch with a little water, then stirring it in while the sauce is simmering.
