Ingredients:
For the skewers:
500g chicken fillets, cut into pieces
1 bell pepper (red or yellow), cut into squares
1 onion, cut into chunks
Wooden or metal skewers
For the marinade:
3 tablespoons olive oil
2 tablespoons lemon juice
2 garlic cloves, minced
1 tablespoon honey or maple syrup
1 tablespoon soy sauce
1 teaspoon paprika
1/2 teaspoon cumin
Salt and pepper to taste
Fresh herbs (parsley or cilantro) for garnish
Instructions:
Prepare the marinade:
In a large bowl, mix the olive oil, lemon juice, garlic, honey, soy sauce, paprika, cumin, salt, and pepper.
Add the chicken pieces to the bowl and toss to coat them evenly with the marinade.
Cover and let marinate in the refrigerator for at least 30 minutes, ideally 2 to 4 hours for more flavor.
Assemble the skewers:
While the chicken marinates, soak the wooden skewers in water for 30 minutes to prevent burning.

Preheat the grill or grill pan to medium heat.

Alternatively, bake the skewers in the oven at 200°C (390°F) for 20 to 25 minutes, turning halfway through cooking.
